Read a US low-fat claim with its applicable serving context

Check the reference amount and small-quantity branch behind a US low-fat claim instead of applying a universal per-serving shortcut.

Three grams of fat per serving is not a universal shortcut for deciding whether a US food can carry a low-fat claim. The relevant food category and reference amount matter. A small serving can make the printed fat amount look modest while another required comparison basis tells a different story.

Locate the reference amount first

The reference amount customarily consumed, often shortened to RACC, is a regulatory quantity. 21 CFR 101.12 sets category-specific reference amounts and explains their role in claims. Do not replace that amount with a portion you personally choose to eat.

Under 101.62(b)(2), the ordinary-food low-fat threshold is 3 g or less per RACC. For a RACC of 30 g or less, or 2 tablespoons or less, the food must also meet 3 g or less per 50 g. The rule gives an as-prepared qualification for certain dehydrated foods. Meals and main dishes instead have a separate branch requiring no more than 3 g per 100 g and no more than 30% of calories from fat.

A small-quantity example that changes the result

Assume a fictional conventional snack has an applicable RACC of 30 g, is eaten as sold and contains exactly 2 g fat per 30 g. We are stipulating the category and unrounded quantities for this exercise, not assigning a real snack to a category.

CheckCalculationResult
Per 30 g RACC2 gWithin the 3 g threshold
Per 50 g2 ÷ 30 × 50About 3.33 g, above the additional threshold

The first check alone would miss the second result. Eating only 15 g would not remove the claim's regulatory basis; it would answer a different question about your chosen portion.

Save the missing context, not a verdict

For a real package, record the product category, applicable RACC, labeled serving and fat declaration. Keep uncertainty about classification or rounded quantities visible. A photographed panel may not provide every fact needed for a compliance determination, and other claim conditions still apply.

A low-fat statement also does not summarize the food's other nutrients or its suitability for an individual. Use it to understand a specific declared characteristic, then inspect whichever other fields matter to your shopping task.
